Rudy's Onion Pie
Crust: (Make 2 of these)
1. 1/2 lb flour, salt, coarse pepper
2. 2-1/2 oz water
3. 2 oz olive oil
Mix 2 & 3 together
Filling:
If using a food processor put in flour, salt and pepper turn it on and slowly add water and olive oil. When it looks like coarse crumbs take it out and shape into a ball.
For a 9x13x2 pan, use 3 lbs of onions. Peel and Slice.
In a large skillet, spray with Pam, add salt, pepper and almost 8oz of crushed tomatoes. Cook until onions are soft. Put in a colander over a large plate or bowl. Drain while making the crust. Sometimes it is necessary to add a little of the liquid back into the pie.
Roll 1 ball of dough thin, line pan with dough so it hangs over the side. Put onions in pan and spread evenly. Slice Romano, cover the entire pie in a layer of cheese. Now take the other ball of dough, roll thin for top crust, trim and fold dough to seal pie. Brush with a light coating of olive oil. Poke holes with a fork over entire top about 2 inches apart.
Bake 350 in oven until dough pulls away from side of pan and is light brown.
350 about 1 to 1 hour 25 min.
