Almond Nuggets
Almond Nuggets
1 cup finely ground almonds
2/3-cup sugar
½ tea. Baking soda
2 ¼ cups flour
1 ½ tea. Vanilla
2 sticks butter
Confectioners’ sugar
Heat oven to 350º
Using a food processor (my family uses a coffee grinder to grind nuts), grind almonds. Set aside. In a bowl combine flour, sugar and baking soda. Using your hands, or a pastry blender, cut in vanilla and butter until mixture resembles coarse crumbs. When well mixed gradually add ground almonds. Divide dough into two equal balls. Place in plastic wrap and chill for 2 hours.
Using your hands, roll the dough into 1-inch balls. Place on a cookie sheet and bake for about 12 minutes. While they are still warm, roll in confectioners’ sugar.
