Czechoslovakian Pastry Bars
3 sticks butter, only
1 ¼ cups sugar
2 eggs
1 tsp. Vanilla
1 tsp. Salt
3 ¾ cups flour, divided (3 ½ & ¼)
1 cup chopped walnuts
1 (12 oz.) raspberry preserves (wire whip to make spreading easy)
Heat oven to 350º
In large bowl cream together butter and sugar until light and fluffy.
Beat in eggs and vanilla until combined.
In medium bowl mix salt with 3 ½ cups flour. Gradually add to the butter mixture to form thick batter. Spread ¾ of batter evenly over surface of an 11 x 17 inch jellyroll pan. Spread jam in even layer on top. Sprinkle nuts evenly overall.
Blend reaming flour with rest of dough. Crumble on top. Press lightly over mixture.
Bake 35 minutes or until crust is golden brown.
Cool completely and cut into bars. (I do tiny squares. You get more that way.)
Makes about 4 dozen. (Depending on the size you cut.)
