Grandma Darling's Irish Soda Bread
4 c sifted flour
1/4 c sugar
1 tsp salt
1 tsp baking powder
1 tsp baking soda
2 tbs caraway seeds (optional)
1/4 c butter
2 c currants or raisins (optional)
1-1/3 c evaporated milk
1 egg
1 tbs sugar
1tbs water
Into a large bowl, sift together first 5 ingredients. Stir in caraway seeds. With pastry blender, cut in butter until coarse crumbs form. Stir in currents.
In small bowl, mix evaporated milk and egg until well blended. Add evaporated milk mixture to current mixture; stir until moistened.
Turn out dough onto lightly floured surface and knead 12 times, shape into ball and place in greased 2-qt casserole dish. With sharp knife, cut a 4" cross, 1/2' deep, in top of loaf.
Bake at 375 oven for 55 min, or until bread is golden brown and toothpick inserted in center comes out clean.
