Uncle Danny's Homemade Italian Bread

OK Here goes.....Like Mark's antipast, scotch or vodka goes well while making homemade bread (beer or wine is good too).
2 cups warm water
5 cups of flour....bread flour is best....regular flour is fine
5 tablespoons yeast (I buy dry yeast from Sams Club in 2 Lb paks...I make a lot of bread, pizza, strombolis, calzone and occasionally, Zeps)
1 tablespoon sugar
1 tablespoon salt
2 tablespoons olive oil
I have a stand mixer, which I prefer, but by hand is OK
Run the bowl of the stand mixer under hot water
put in the warm water, yeast and sugar....mix with the wire wisk.. let sit for 5 minutes
Put on the dough hook and add 3 cups flour...let it run on # 2
When mixed, add another cup of flour
While its running, drizzle in the salt and the oil and then another cup of flour...Easy or you will have a mess
let it run awhile...8- 10 minutes while you make another coctail
Take it out and put on flour on the counter. Its going to be very sticky..add enough flour till it doesnt stick, roll it into a ball, oil it and put it into an oiled bowl
Cover with saran wrap and let it double. When it doubles, squash it down and cut in half and make 2 balls
Take a big baking pan, turn it upside down, oil it and sprinkle corn meal on it. Grab your balls (bread ) and push out into rectangles about 5 " short of your pan. Roll like a jelly roll,
tuck in the ends and put seam side down on the pan. Beat an egg with water and coat your loaves and let sit uncovered till it rises nicely.. 30 minutes or so, you
will know.. Bake at 400 for about 45 minutes.. I'm guessing most Aloises know what a cooked loaf of Bread looks like, except maybe Coleen and Tommy
A lot of times, I will cover my rectangle with onions and pepperoni before I make my jelly roll..That idea comes from Uncle Rudy.. VERY EASY
