Potatoes and Eggs
1. Peel large white potatoes. 1 per person.
2. Slice potatoes less than 1/4" the short way.
3. Brown potatoes in olive oil. Salt potatoes each time you turn them.
4. While potatoes are cooking, put
2 eggs per potato,
cold water (NOT MILK),
salt and pepper
and 2 MORE EGGS (no matter how many potatoes; don't ask questions haha)
in a blender.
Blend until frothy.
5. When potatoes are thoroughly cooked, pour eggs into the pan with potatoes and stir. Cover. Let cook on med. heat until eggs are throughly cooked, turning occasionally.
Serve hot or cold on rolls or a plate. With or without ketchup. Aka however you want :)
