Uncle Rudy's Arizona (Pepperoni) Bread
3 cups flour
1 teaspoon sugar
1 teaspoon salt
4 to 5 teaspoons DRY yeast
Black pepper, freshly ground
Pepperoni (stick type) 10 to 12, 1/8 inch slices
1 cup (generous) water
2 tablespoons olive oil
Mix the first 4 ingredients.
Cover flour mixture with fresh ground black pepper and stir. Do that 4 times. (the way you would put pepper on your food)’Skin and cut the pepperoni into 1/8” thick slices and then put 3 slice together and make 3 cuts, turn and make 3 more cuts, so that the pepperoni is diced. Do that to all 10 or 12 slices.
Stir the pepperoni into the flour mixture.
Stir the oil into the water.
Make a circle in the middle of the flour mixture and pour the water and oil into the center of the circle. Stir gradually from the center out until a dough ball is formed. Knead the dough. If it is too dry sprinkle with water, if it is too wet dust with flour. The dough should have the consistency of pizza dough.
Cut dough in half and roll like a rope. Make a rope about 14 inches long.
Make a circle out of the rope and put onto a 17” cookie sheet, or use 2 cookie sheets. Flatten the circle slightly. You will have room on the cookie sheet for 2.
Heat the oven to warm and turn it off. Cover the dough with a clean dish towel and place in the warm oven until it has doubled in size, about 40 minutes.
Take it out of the oven and preheat the oven to 450 degrees. Bake for 20 minutes or until it is tan in color.
Let cool on a rack and slice. Freeze leftovers. Warm frozen bread in oven.
